Tomato Bread

Bread soaked in a tomato/red pepper sauce and charred on the grill

The idea behind this is to soak bread in a sauce of roasted red pepper and tomatoes and then toast them on a grill or griddle. You can also top them with grated cheese, and other toppings like anchovies or olives.

Grill Set Up:

  • This can be done on a hot griddle or high heat grill. Have a warming area set up on the grill or in an oven (to melt cheese if added)


  • One baguette sliced into 1/2" slices
  • One roasted red pepper (either grilled or bottled)
  • Two roasted tomatoes (either smoked on grill, or other options in variations below)
  • 2 Tbl fresh chopped thyme leaves
  • 4 cloves of garlic (grated or finely chopped)
  • 1 Tbl red pepper flakes (other options in variations below)
  • 1/2 cup EVOO
  • 1 cup grated Manchego cheese (can omit)

Combine all of the ingredients above, except for the cheese, and combine using a blender, food processor, or immersion blender. Slice the bread into 1/2 to 1" thick slices and soak in the blended ingredients for at least 30 minutes. Make sure both sides of the sliced bread get coated. Once it is toasted to your desired doneness place the grated cheese on top and let it melt.
